It is possible to get a 'thick' output from just about any guitar, humbucking helps when dealing with interference, but noise cancelling single coils deal with this.

Some of the 'dirtiest' sounds to ever come from guitars were high powered single coils.

For live metal, where you are dealing with high volumes and often lots of effects, etc. humbuckers are a great starting point, but most of the reasons for using them are no longer practical ones, just leaving the preference for the sound.

Les Pauls sell based on the scale and string tension as well as the sound itself.

In the studio, where interference is better dealt with, many find the lack of clarity (bass bias) renders hb guitars inarticulate. Hence many such guitars being retrofitted with coil taps, which makers then added as factory options, and featured on studio models.

Personally I love to hear both played well.

My favourite players include Neil Young, Jimmy Page, Hendrix, Halen, Pass, Beck. So I have no idea about yer fancy Nu Metal ya ya. ;)

Or you could ask Mr Page what guitar he used on the first album. And in the studio for many years. The Les Paul was his main live instrument, and even that was fitted with coil taps so he could get a single coil sound. And of course he used a Danelectro as well on stage with single coils.
