Are these normal V Brakes and if so do they work with the brake levers without deflection?

They are normal M739's, the levers are Dia Compe DC 287s which are designed for V brakes, they work perfectly.

Ive got a specialized globe Vienna 3......don't laugh.....its by far the bike ive ever done the most miles on and has very few original components ....as ive added bits since the day i bought it. Fits perfectly, never given me grief, comfortable, used on and off road (aka gravel use). Its actually my go to bike for touring.....(i only do toothbrush/ 5 star hotel/ change of clothes touring it should be said)..... but a fantastic partner for 18 years now.

I actually only got it after a motorbike crash, which left me unable to ride my mountain bikes and i had no intention of keeping it!

Its a funny old mixed bag of xc pro, new and old xt, Thomson, Ritchey, lx, sakae, x-lite etc, topped off with wtb nano 40mm tyres.

I like to share some thoughts over these often overlooked crosshybride gems.
After refurbishing some mid-range early 90 steel 26" mountainbike's, I had to admit that my 1,92 is just on the plus-side.

Since my every-day workhorse is an 25 year old Intersens (predesessor of Sensa) hybrid (with an ongoing problemfree Shimano LX560 group on it, I thought it would be an even more challenging search for early 700c's

At first I found a DiamondBack Override (the overdrive's cheaper brother). The purist will notice the other color; I reprinted the decals. Planning to mount a 9sp gripshifter with matching X9 derailleur. Nice tyres.

A Panasonic CB 600 was next and finished.

A (unfortunately little too small) Trek 750 multitrack with a complete Suntour group.

And the first Koga Terraliner from '92 in 'For Sale' mode.

But then, and I've shown him before, my next too perfect (for me and for now) Koga Miyata Terraliner Carbolite with XT. What a magnificent piece of engineering and quality; even after 30+ years!!

And because I've lost my promise to my wife not to collect too much more .... I've compiled a list of future wanna-have's.

Reply me more models or use the list yourself too gasp on the succesful rebuilds that can be found on the internet.
