M900 with Swisstop Blue BXP in Jagwire CX pad holders are REALLY good and pads hardly wear on non-coated brake tracks. Don't know what they are like on ceramic etc . Can be noisy at times but makes for a good early warning device!
I was going to but then realised they wouldn’t suit - wanted something silver or gold
Now if those were in silver / champagne / gold or even green I’d be very tempted IF I could ever find or afford em

Early DC 980s.
The machine tech batwings are lovely. I regret selling mine, the levers are also very cool.
Xc pro and dia compe are also good choices.
Controltech look great, another retro part I wish I'd hung on to, but if I'm honest, I prefer v brakes, even on retro frames.
No mention of pederson brakes. I had a few sets and they look cool and seemed to work pretty well.
Onzas were made of cheese.
Recently had some deore LX, nice in black, swapped over to v style pads as mentioned by fluffy. They worked and weren't too difficult to dial in. I think toe in on pads is important on cantis, not so much on v brakes.
