Thanks for the links @Guinessisgoodforyou do I need to consider the different iso threading standards? I noticed on the Sheldon brown website there is a list that states sizing based on country of origin? If so with it being a British hub would I need to try find a British or equivalent...

So the spacing between the dropouts is 120mm, and I managed to get the 3 speed freewheel off of the BHC defiance hub. So hopefully I just need to find a 5 speed hub that fits. In accordance with what @Guinessisgoodforyou said earlier I assume this should mean I need to find a 3/32 chain 5...

Thank you for the kind words @Imlach, the thing for me is I love to learn, I love a project and I love to get involved. I certainly wouldn't attempt anything without guidance/help that I felt was beyond my capabilities, with my main hope just being to initially getting one of the bikes...

Thanks Guinness, hopefully over the weekend I'll have some time to sort through the wheels, freewheels, etc I've got and measure up the spacing, and even if I can't do it myself I can at least understand what would need to be done. I'm pretty sure I have a matching set of BHC defiance hubs...

I'll try measure that tomorrow. When it comes to freewheels is it easy enough to move one onto another wheel if I have a hub/rim that is in better condition than the others?

Do you mean that these mounting points should be hidden behind the chain ring? So if I was to undo the fixings and move the chain ring to the front and re-attach that should be correct? Very odd that the grandad would have done that by mistake considering he seems to have picked out some good...

I'm afraid my noob levels are making me ask more and more stupid questions, but, what exactly is in the wrong place on the carpenter? You may have to word it as if you were talking to a child (mostly as my brain of pretty fried after dealing with a poorly child this evening)

Okay, so I think I have been measuring things wrong, as the iso size is related to the iso bead size rather than the overall rim size. 🤦 Which I guess then means that all the rims I have are actually all 700c's and not 27's after all. Either way I'll have to buy a pair of short clearance brake...
