Good news, all you need is a freewheel on your wheels, pretty sure its 3/32". When we know the spacing we can work out the amount of speeds. If its 120mm all golden 5 speed, 4 speed from memory is around 115mm. If you have a vernier check the thickness of the chainwheel teeth. If its 3/32" it will measure 0.0938" or between 2.35mm and 2.40mm. If it's 1/8" it will measure 0.125" or between 3.10mm and 3.20mm. Getting there :)

Edit the chainrings are on the wrong side of the c/wheel spider, rings should be outside the step locates them.

Does anyone have an example photo of how it should look so I know what I'm meant to be looking at 😂

Great pictures. Just the stuff.

Worth getting the rear spacing dimensions written down like @Guinessisgoodforyou said - here is as good as place as any to help anyone else.

This is a French 5 speed "plunger" or "pull cord" type Huret rear derailleur. Typical style of the 50s. Out of all your wheel collection, if there is a wheelset which is 27 x 1 1/4 and with a 5 speed freewheel it will most likely be the set to help complete the carpenter and work. 🤗

Well spotted @Woz more Merlot pour vous. 👍 What woz said.

I'm afraid my noob levels are making me ask more and more stupid questions, but, what exactly is in the wrong place on the carpenter? You may have to word it as if you were talking to a child (mostly as my brain of pretty fried after dealing with a poorly child this evening)
Look at the 3 arms on the chainset your chainrings are bolted on the inside of the 3 arms. They should be bolted on the outside of the 3 arms engaging on the visible shoulder. Compare the pictures.

Do you mean that these mounting points should be hidden behind the chain ring? So if I was to undo the fixings and move the chain ring to the front and re-attach that should be correct?

Very odd that the grandad would have done that by mistake considering he seems to have picked out some good bikes/gear, so would assume he should know this stuff too lol
