which part has impressed you most over the years?

Best performing/lasting derailleur ever made.

Time ATAC pedals – 15 years on and still work like new.
Bullseye front hub, 18 years and a couple of rims and they still just go on and on.

Biopace HP chainrings (26-36-46) on a rigid frame. :D Mmmmm, smooth power......
(I may be alone on this, but that just means more for me if you don't want 'em :D :D :D)

It's modern, so apologies, but the current crop of dual pull/push shifters. Until I went back to standard shifters I didn't realise how convenient and useful the ability/option to push a shift lever both ways to achieve the same shift direction actually was.

On the retro side of things, hmm. M900 shifters aren't that great, but having recently been out and ridden for (to me) a considerable distance, I'll nominate 3 items:

1. My DBR AXIS TT ti frame. My first ti frame and it rides beautifully. Very comfy yet responsive. Titanium is a lovely material, that is until I build and ride my yo eddy, then I'll have some steel to compare it to.

2. Specialised umma gumma team and pro control tyres. Lovely and grey for starters but grip in abundance. It took me a while to get used to the fact I could turn at the point I needed to, not in advance.

3. Aside from the silly proprietary rings, xtr m952 is simply excellent in all departments in my view, but if I had to pick a part, it's the satellite rear shifter for bar end fitting. A simple idea, and one that until you've tried it, you've never realised how useful it can be, especially on a long ride with plenty of uphill sections, or simply long flat cruises.

Rear derailers,

They're just works of engineering art and they just keep getting more sophisticated and clever.

I love the Disraili Gears site

Shimano M737 mechs. Prettiest of the bunch and with TLC mildly immortal.

I'd extend that to the whole groupset. Absolutely outstanding and apart from the mega-pricey M95x XTR probably the sweetest-shifting/braking/looking set out there; far exceeding the previous M735 and at the risk of upsetting the fanboys - M900.

But it's the hubs for me. Ride 'em; abuse 'em and they'll still come back for more.

Never really improved without throwing XTR cash at it; why bother if you want a great all round set up? I guess the big S had to rake in more cash with later "upgrades" to it somewhere over the years.

Lots of components impress me with their consistency and longevity, cartridge BBs for example, but for me it has to be SPDs.

I've had various versions over the past twenty years and all of them, including my original set, still work just as well as they always did.
They take so much abuse and require so little maintenance.

Whenever I try riding on flat pedals I always wish I had my spuds on.
