This just goes to prove that you’re a retrobiker Gus! The fact is that retro bikes look cooler, but unfortunately of course modern bikes with long top tubes and short stems do handle better.

How about saddle higher than bars? Also looks cool, also not found in modern catalogues

my saddle always at least 6 inches higher than bars. The one bike I had where the bars were the same it felt very very wrong - I couldn't get any power into the pedals and couldn't use my arms at all... :?

That is not cool. Plus not having the correct size frame will lead to back problems :(

I've always ended up with the saddle higher than the bars ( usually 3-4 inches) - even on my 2005 Blizzard with 1" riser bars and running 120mm travel Marzocchi Marathons the saddle is still higher than the bars.

Yep, saddle definitely higher than bars!

I'm definitely a fan of the long seatpost (pretty much a necessity to be honest) but wonder if a long seatpost is the bike equivalent of a long bonnet on a car?

Well no, surely it's the other way around? If you don't have a long seat post, you're likely to have a high top tube. And if you have a high top tube then it's all the more likely that you might need a replacement for somthing that's a little on the small side!
