If the pedals are Look X Tracks you can make them one sided. Well one and a half, to be exact. Just un-bolt one end and prise out the springy gubbins. It still leaves the solid part of the clip system so you can engage the front of a cleat, from standstill.
I made this mod to mine as one side of these pedals always seems to have less slop than the other and i prefer the more sloppy side. I didn't weigh the pedals after the mod but they are alot lighter.

Regarding stems; the least number of grams for not alot of money is the Kalloy Uno. This one

They are as light as the weenies say and they do not flex, or snap at the sight of roots and ruts. I think i remember right that my 100mm , with ti bolts, came in at 94g and cost about £25, from a chap on LFGSS.

You haven't mentioned bottle cages but i like Elite Leggero carbon cages. They are super light and don't eject bottles. You can also take a large half round file to the front bit of the cage, that hooks into the bottle(i use Elite bottles), to make entry/exit easier without impacting the retention. It files very easily so be careful and do it wet for the carbon/resin dust.
