looking at it, do you think i should cut fork stube down about another half inch? as stem looks a bit high to me

If you want to try the stem lower then just stack the spacers on top of the stem instead of under it, it won't look pretty but it will give you a chance to ride it and see if you prefer the stem lower, without taking the drastic action of chopping the steerer down.

The height of the bars in relation to seatpost height is one setting that can impact climbing performance, I originally built my Ruckus with 130 mm Marzocchi Z1 forks and found it a pain to climb on, with the current 100 mm Z1's it's a lot easier to ride up long climbs although not quite as capable downhill.
It also depends how tall you are I'm just under 6' and the saddle is about level with the bars (medium 16" frame) that gives me a balanced riding position with a 90 mm stem and a 20 mm layback seatpost.
If it's going to more of a play/jump bike than trail bike you'll want to keep the front end higher and shorter than my set up and as jimo746 says don't cut the steerer play around with the spacers to achieve different heights, remember you can cut it off but you can't cut it back on

have changed front crankset and pedals, also got a set of disc wheels, and am now after an adaptor do add 20mm as i have 160mm rotor on it bit my frame designed for 140mm, have a calliper to go on the rear but need get adaptor first, or possibly a 140mm rotor, but isnt the bigger the rotor the better the braking?

The adaptor you need will depend on the brand of brakes you have, Avids for example have alignment washers between the adaptor and calliper body so the adaptor is a little shorter than others.
As to disc size it's down to weight and riding style a 140 mm rear disc will lock up a wheel off road or on but when you're using it to slow without lockup the pad/disc heat will build up and heat the fluid in the system this can cause brake fade, a larger disc can get rid of the heat quicker before it heats the brake fluid.
Unfortunately the only adaptors I have are for 140 mm discs (probably why they're spare!) but to be honest the disc in the image looks more like a 160 have you checked the diameter? I've got a 160 mm on my Ruckus but I'm sure it's capable of running a 180 or possibly bigger, the image shows a 160 mm disc and there's plenty of clearance for a bigger one.

i found a adaptor like one you have put up in that pic, and stuck the mechanical calliper i had on my forks on it, rather have rear brakes at mo, bidding on a set of hydraulic callipers and levers on ebay any way so just wanted to set rear up so can use it till get hydraulic set

would have kept to v- brake on rear and disc on front but wheel on rear was off my carrera till i had got the set of disc rims for it, and now selling my carrera so needed put wheel back on

I'd strongly recommend Avid BB7 mechanical discs (I have them on all my bikes) I've previously used Hope discs but I finally gave up trying to service them and fitted BB7's, set-up takes a bit of practice and you need really good cable outer but the performance and reliability are first rate (no fluid leaks, bleeding, fade from overheating, less drag as the pads run further away from the disc than hydros) .
I recently fitted a pair to a mates bike I got them from ebay see link (currently out of stock), you need to add levers and cable but they're still great value and the lack of hassle is worth it.

thats my hydraulic brakes done, levers are my shifters too, designed for 9 speed on rear thou, so need get 9 speed cassette and swap over the 8 speed that is on it, but least now its ready to ride, just need get a decal set thou
