1x10?

Big Cheese - agreed but I am playing with SRAM 10-42 11 speed for the first time, and when you look at the gear tables this can offer better range than 10x2. But then I stuck this on a 29er and forgot to bring down the front ring from 32 to 30 - now remedied.....

.... and I certainly still have wheel sets with 6 speed spin on freewheels ... nuffink wrong with a 6x3 and authentic too on a whole load of bikes....

... and I remember the different drive chains I have had over the many decades ... and the hills I got up (and down) with them ... new is good, but we still had (and have) huge fun on the old too....

This is more like it. Think about want you want you & your bike to do then build accordingly. My hack has a 7 speed 11-28t and a 32t chainring, it gets riden a lot when it's too grotty for the posh bike. Perfectly suited to my local loop.
 
If your rear hub will take a ten speed cassette, I don't see why not. But you will probably need a narrow-wide chainring.
I'm running an 1x8 on my '94 Wheeler with a regular 42t ring, and the chain won't stay on in the two lowest gears. That doesn't matter, though, as I built it as a speedy but rugged commuter, which never gets below 4th.
I'm actually thinking of taking a few links out of the chain to make the higher gears work better. The chain has dropped a couple of times jumping kerbs. And since I don't need the lowest three-four gears on this bike, it will be a cleaner solution than adding a chain catcher

I have 1x9 on one older bike with 32 front and 11 -32 rear. For cross country fine. It's a "ghetto fix" as suggested above.

As for the chain jumping off, I tried a few plastic devices....all were 5h1t. Then I found rohloff chain guides....wow. never had a problem in any situation. Second hand normally £25.00 -ish. Or 50 new.

I just have a front mech witht he limit screws set, never lost the chain.
