Thanks for the comments so far folks, I'm really warming to this era of Saracen! I'll think about those toeclips as well....
Since decided on a period Deore II build and I've now sourced all the missing parts to make a 100% complete groupset, including pedals and headset. Silver brakes are going to be switched for the same in black and will be up for sale.
I might even start the strip down and deep clean this coming week
