Re: I'd either use a decent Shimano s/s set or if funds permit, Jagwire do an ultralight aluminium housed gear and brake cable set. Not cheap £50(?) ea, but they come in various colours and do give a nice firm feel.

Varnishing bare wood work tops can be a good idea sometimes as it cuts down cleaning times and keeps the place cleaner.
