9speed M951 Rear Mech with 8 Speed XT shifter

Can you use a 9 speed Rear Mech with an 8 speed shifter ok?

I know it’s not ideal but shouldn’t be any risk of the change going too far in either direction - right (or not)?

Use a 9spd chain and it will be fine
I’ve got a 8 speed cassette though (currently everything is 8 speed XT), I want to slowly change each component to XTR M950/M951 and ideally keep all 8 speed but I’ve found an M951 rear mech for a good price so looking to see if it will work ok
 
If memory serves me right, yes. All Shimmy (and shimmy clones) have backwards compatibility with 1-speed-down pull ratios.
Read about "Shimergo" solution.
Instead of feeding the derailleur cable straight into the clamp bolt you need to turn the clamp 90 degrees and feed the cable around it. This trick adjusts your current shimmy pull ratio to the previous Shimmy spec.

Interestingly, you can also use campy shifters with shimmy cage/cassette, which is Shimergo is all about. Again, if memory doesn't fail me, 10sp campy is the same ratio as 8sp shimmy, and 9sp Campy is same as 7sp Shimmy.

I've been running 10sp campy brifters with 9sp shimmy cage&cassette for thousands of miles and it works like a dream - better than shimmy with shimmy.
 
You should use a 9spd chain with the 9spd rear mech as the cage is slightly narrower and the slightly thickerer 8spd chain will rub
