Either way, make sure you get correct type (do you need ahead or threaded?) and size (1" or 1 1/8"?)

I think you need threaded 1 1/8" in which case make a note of what length steerer your forks have and how much of that is threaded... then make that figure your minimum requirement

if it's threaded it will have a big nut at the top of the headset, and your stem will fit INSIDE your fork steerer tube. If it's unthreaded aka ahead it was not have the big nut and the stem will fit AROUND your fork steerer tube.

I tried to find a better pic but couldn't so *cough* made that one! Whatever the measurement is within 2mm of your ideal fork length, don't consider anything shorter!
 
ah ok, that's an ahead fork and headset, it's unthreaded. The two bolts at the rear of the stem are pinch bolts which clamp the stem tightly to the fork. The big nut you mentioned is the top cap, this is used to preload (ie adjust) the bearings in your headset BEFORE tightening the aformentioned pinch bolts.

Measure your steerer as I mentioned, but you can minus a couple of millimetres as in the ahead system the top of the stem (where you put screw the top cap in) sits 4-5mm above the top of the fork steerer. If you find a fork with a longer steerer you'll just need some ahead spacers on the steerer tube (generally below the stem) to compensate.
