The 2.8i is a different beast altogether, the Cologne motor was designed to address all the issues with the Essex, it's a smoother quieter motor, generally better behaved than the Essex, better fuel ecconomy and better starting and idling from cold etc due to fuel injection, also with the Essex you are stuck with four speeds with the 2.8i you get five speeds and a taller overall gearing so motorway cruising as better, a five speed box can be fitted to the Essex but it's not cheap or easy.
But the Essex motor will always sound better than a 2.8i due to the 2.8i having siamesed exhaust ports in the heads and a different firing order, the 3.0 Essex puts out more torque lower down so feels more grunty but is rather thursty, i'd say the 2.8i would be better for regular use, the 3.0S for blatting round town and backroads.
I mainly went for the 3.0S for the sound and grunt and it's a bit more special than a 2.8i.
If you are going to build a V8 though dont use a 3.0 car as they are getting rare.
