I will say on an 11-28 or 11-32 cassette, on some bike I prefer Shimano and on some o prefer SRAM, both have a different set of cog in between.
On one bike I hated, it never felt right, I had a SRAM cassette fitted, switch to a Shimano and the thing felt lovely, the pedalling was just correct, odd but true.

That is true, most Shimano 8 speed cassettes, specially if going up to 34T, the previous cog is 26T, making the jump a bit too much. However, I have found that the HG-50 cassette (sometimes called "Claris" has a more progressive gearing, going from 34t to 28T, something quite acceptable.)

With an 11-34T cassette, and the usual 46-36-24 at the front, I get a 592% gearing range, take that Eagle & XTR!!

I tend to use modern myself. Haven't got any 8 speed builds anymore,9 is as low as I go, ventured into 10, toyed with 11 but not yet. I do have a few spare chains and cassettes, including a new old stock shimano hg51 (I think), proper ratio 11-32 iirc. A few barely used others as well.
