My tip is take loads of pics of the bike - and 'exploded' shots of the various parts that you strip down - for reference... also nice to look at in a few months/years time when you're enjoying your shiny, restored bike!
I've restored/refurb'd a couple of similar vintage Dawes in the last year... should be a fairly straightforward job, keep us posted and FWIW I'm also in Manchester if you ever have trouble with stuck stuff for example (he says having almost destroyed another bench vice)
