I have a Bianchi Pista and really wouldn't mind putting on a different set of wheels, The question is would a standard 700c rear wheel fit if I put on a single cog on the rear instead of the cassette since the cassette would be useless?

I'm quite sure it won't fit because the Bianchi Pista has 120mm rear spacing, and most racing wheels with cassette body are spaced 130mm.

I recommend you to buy a track wheel (with flip flop hub if you want to run both fixed and SS).
