My wife and I did some of the Derbyshire peak district which was very pretty. We have talked about Devon and Cornwall though.
I've found Cornwall a bit challenging: getting between the lovely destinations, I always seemed to end up on narrow lumpy lanes between thorny banks - but "sharing" with large vehicles with little respect for cyclists.
Modern mapping might make it better?

I've read exactly the same, narrow, hilly and dangerous lanes with high hedges both sides like the Bocage.
