Modern V brake options

Shimano still do a decent set (T610) for trekking bikes. They seem to be more widely available in Germany, but Spa and SJS still carry them.

Also, how about Magura rim brakes, assuming flat bars?

Maguras would be great, but I'm using drop bars and gave up trying to find some compatible levers a loooooong time ago!

Levers of Ubrake or road bicycles works with V-brakes, isn’t? So for drop bars we can use road levers.

EDIT: I make a mistake. They are compatible with cantilever. To use it with Vs, you have to use this

No, standard road bike levers work with cantis, but not Vs. For Vs you need a dedicated drop bar lever for V brakes, like the tektro 520, or día compe 287V.

And even then they are pretty dodgy with low-profile cantis as they tend to run out of travel.
