I've been impressed with the Conti speed kings. Are you looking for retro or modern?
 
TK- Try Kenda Blue Groove up front and Kenda Excavator at the back- my current Cotic winter set up. For a slightly wider option for the spring I use Schwalbe Nobby Nic front and rear.

looking for modern all condition tyres to cover my normal day to weekend riding, road and trail and single track.

Ideally after the weekend I'd like something that doesn't slide when I traverse a wet mossy tree root or boulder :) - less bothered about ice ability, anything bar studs slides on that.

The sock thing works because of the wool/fibres embedding themselves in the ice (a bit like velcro)* Does smooth rubber have the same effect? A tyre wrapped in socks might draw funny looks.

*completely made up "fact"
 
Most modern tyres are good tbh, and most manufacturers will have their do it all. What you really need to do is pick one that matches your bike :D .
