I tend to use my thumb to seal against the cap side and force the grease down through the pedal until I see fresh grease spewing out of the axle side. If there's any hint of dirt or grit they get hosed out with brake cleaner first.

I do have gappy floorboards as it happens, but I try to have my balls under control most of the time!
