Co-incidence! My wife and I were just discussing this as she had heard a few comments about Universal. Apparently Harry Potter is very good and should not be missed - unfortunately, I do not know who he is so I am going to have to watch a film or two prior to going.

We found the standards low, for instance in the props display area they were displaying some of what can only be described as scrap wood as part of a set from Murder she Wrote, the earthquake ride got turned from a masterclass (in 1990 and 1993 when we went) on how to create realistic effects into just a short ride (in 2001) that tried to ape catastrophe canyon but with none of the polish, the original format was far better. It was a little content light on the whole for us, but have gone back each time after hoping it had improved but finding although it had, it still didn't have the polish of MGM. That said we haven't been since 2001 (before that it was 1993 and in opening year in 1990 in the first month it was open) so it may have improved and we will probably visit again when we get the chance to go back.

My family went to universal Feb this year and enjoyed it. They're kids after all and polish is not wat they're after;-)
They where 5 and 8 at the time.
But they did Disney's a few years before to (they managed to drag me along this time)
Its not at Disney standards though.
Again legoland was great and they even had to go back. Buy the ticket and it can be extended to an open ticket for not a lot.
Its not as busy in Feb and we would never do them in the night of summer holidays. I just shudder thinking about the crowds and heat now.
Downtown was apparently nice, Celebration was a good place to walk around to.

Plenty of other things other than the horrendously extensive Disney parks to do.

Definitely get a car. Going to the Everglades as a kid with my family was a very memorable experience. Seeing toucans and flamingos was a real kick.

If I were to make the trip today, I would also want to stop along the way at Coral Castle for an hour or so. I've never been there, but from what I've read and seen on the internet, it's fascinating, and it's definitely on my 'bucket list'.

Oh, and forget about mountainbiking while you're there - ain't no mountains in Florida. It's as flat as a billiard table.

If you spend a day in a park, do you need a rest on the following day? My wife has been working out a plan but it does not seem to have many non-park days although some of the days are only half-days.

We found our kids needed a full day not trouncing around and waiting in the (relatively shirt queues) and we could fast pass most rides if needed due to my youngest.

Especially when the temps hit 30C in February. They just couldn't cope.

To be honest we did no plan as there was no point, kids wishes would instantly destroy any plan as they see what they want to go on. Disneys for the kids.

There are kids based quests in a lot of parks, I would use them to stop them getting board. Phil and Ferb in Epcot can take up a lot of time.

Some of the rides are rushed through like peter pan and the norweigien one in epcit, don't bother especially as the queue can be really long. Google maps has reviews on places too.
You can ride most rides via YouTube to get an idea (didn't think about this till after we came back though).

I reckon 2 days then you will need a down day, but as you can do parks like Seaworld, Universal Studios or a water park in much less than a day if you plan them in between days at disney and the heavier parks you can treat them as down days. Kennedy car be a long day for the driver but is an easy one for the kids as it's over an hours driver there and back and some of the day is on a tour bus (these tours are highly recommended) s not as full on. The heaviest days will be in Magic Kingdom (you'll need to go twice) with a late night parade and fireworks makes one day a mega day, Epcot (easily a full day) they used to do a great laser and fireworks display over the lake which is worth seeing, MGM (a day and a half can be wise here) and Universal Islands.
