What year was the M900 in black with the Pepperoni and the red decals?
Dove into a good few catalogues but can't seem to find it.

It almost looks like this, but decals at the seatpost and a Pepperoni.
I can buy a 22" 1992 blue M700 with Pepperoni for cheap (it's for my e-bike) so I want to give it the black red M900 look.
Anyone know what year I'm looking at I can only see pictures withe "fatty" is that's what it's called?

Your firk is a P-Bone, not a Fatty (straight legs instead conic legs). Should be 97 or more.
you just have to look serial number and to go to vintagecannondale.com
 
I don't own that bike in the picture, so that would be hard.

I do own this MONSTER of a bike. It's a whopping 24,5 inch from center top. (62cm)
It does measure 56 - 22" C-C , was this normal for the 92 line-up?

The paint is shot, but that's fine.
I assume that's a 1 1/4" pepperoni? Looks fat.
(can't find my calipers)

So if I wanted to use this frame, which I very well might.
Is the Nitto MTC-023 really the only option and not available in the EU?

Surely not.

Needs a new headset, I loved to see that the 1 1/4" headsets are twice the price from the 1 1/8" which already are 80+ euro's 🤪

 
Also worth noting that cannondale often updated the frame fork combos mid year. So between 95-96 you will see frames with pepperoni forks and cantelever chainstays rear stays/drop outs in the catalogues. The reality is that those bikes came with p-bones and normal rear dropouts as pictured above.
