One thing you might find with tyres: 35mm may or may not fit without fouling mudguards and/or frame. Worth considering.
32mm is probably going to be alright, and will make everything far comfier.
And the Union pedals fitted to it currently are a really good choice; very hard wearing and because they're big offer lots of support for people that won't wear special shoes for cycling.
