Direct translation I suppose is cellar of noses, but in wine context...cellar of aromas.

But it could be mistaken for Chaise de Nez, which might make you sound like seat sniffer! :oops:
 
I'm in the trade also. I'd say don't give it a name. You know a Chablis from Chardonnay so will the majority of your customers. A symbol? For example we all know here the 'Fat Chance' logo or Klien?! My business is built on reputation and service and I'd bet the vast percentage that use us don't know what we're called.
