Which Cassette?

Hello.

Again I'm baffled...it doesn't take much I am in possession of a Shimano 1056 front derailleur and a 1056 rear derailleur. I have also have a Shimano Hyperglide rear wheel.

First question, I see 6 speed, 8 speed, 10 speed it appears to go on and on. How do I choose? What determines my choice?

Does it have to be a Shimano cassette?

Is there much difference between a 1055 and a 1056 rear derailleur. Are they interchangeable?

For information I also have Shimano cranks their either 1055 or 1056 not sure? It's a double chain ring.

A tutorial would be appreciated on this subject

Shimano Hyperglide hub...no pictures as it's in the garage in deepest Kent.

Hello. It has no shifters on the frame as it came originally as a single speed and I was hoping to change that.
