What cleats/clips for 1987 shimano 105 pedals?

A toeclip is the chromed bit that fits over your shoe and it bound at the back with a toestrap. The pic above shows a chrome clip, with the plastic cleat on the pedal.

I am pondering using these at all now. I think i could use the old Sidi cleats.

They look like an updated version of the traditional (non-clipless) pedal, with an extra bit at the front to engage a "cleat" that fits 3 bolt Look style shoes. In other words, they're toeclip pedals for use with clipless shoes.

I would think you use them in the same way as toeclip pedals and shoes with slotted shoeplates. To release, you loosen the toestrap and lift your foot out of the rear plate of the pedal.
 
When the wings at the front are engaged and the cleat is down on the rear of the pedal they are incredibly difficult to get out. As mentioned above about track useage - thi is probably why track cyclists like them - but they don't have junctions, motorists and traffic lights to deal with!
