What 26" wheel set for retro Scott. Used for commuting and possibly some bike packing

I've just picked up a nice Scott summit (full stx and xt) the wheels could do with some attention so I was wondering if I should just buy new.

But what would be a nice, strong and reliable retro wheel set?

I've no idea about retro wheels
 
I've toured for years on Mavic 231s. That's not a specific recommendation, just that decent MTB wheels are fine. Ideally go with 36 hole rather than 32, and heavier rims.
Beware of later Shimano hubs (XT and above, M780 onwards) with aluminium axles, they shrunk the bearings to fit the fatter axle and they don't last long when touring - they have failed in less than 1000km according to reports on the CTC forum. I had a T780 dyno hub fail after 3000 miles when the bearing cups disintegrated. Stick with Deore LX or below with the steel axles. Often the only difference is the finish anyway.

Rigida / Ryde Sputniks are the go-to model for most expedition tourers, they aren't expensive. Try Spa Cycles.
