I'm having a little trouble setting up these calipers.

When adjusting these and tightening up the bolt at the back the pad seem to be touching the pad everytime.

Is there something I'm doing wrong?

If you mean the brake block is touching the rim on one side, there was an easy fix back in the 50s.
Using a convenient piece of wood or metal and light hammer tap the top of the spring where it is looped, to the side of the centre bolt.

Yup :). Top tip from Keith. If the top of the spring is horizontal then the other option is to take a fine pair of pliers and lift off the spring from the side that touches, pull it towards you to increase tension and then tuck it back in place.
 
Get a proper Park Tools centring tool to twist the spring into position, they work work well, there are vids on the PT YT channel for this...
