Re:

Congratulations on the bike! Looks very good and in great condition! I love Trek Singletracks so I'm biased...

If you want it for your wife, and if she's not a hardcore rider, a tip from own experience refurbishing classic bikes for my wife.

Replace the original stem for something much higher and much shorter. Retrobikes have a lot of interesting features, but comfort is not one of them, and non-cycling wifes around the world usually prefer practicality over looks, don't ask me why ;-).

The top tube is usually very long, and factory stems are also always over 130mm (modern bikes come now in the 80mm to 110mm range). You can always switch it back if you want to sell it. Bike will look horrible, but it will be used.

Seen a few of these pop up for sale local and they can be had for not much money. Always wondered what they were like as a frame/bike to ride and going by what titiritero has just said the ones I've seen could have been a bargain??
What's the difference between the 800 series and 900? Is it just components or frame material also?
The long top tube should be ideal for me with my long arms.
I'm on the lookout for another steed but I really want a road bike just to give it a go and see if I like it. So do I keep an eye for one of these or do a fun project with a Raleigh 20 or similar with drops? Decisions!!!!

Re:

That stem is definitely an option. Ugly, but will improve the position.

A more elegant solution is to install a steerer adapter like this one

And then a very short stem, something about 70mm maximum

This guy did something like that for his girlfriend's bike and it looks great given the circumstances

Other alternatives instead of changing the stem is:
-get a downhill riser handlebar. You can easily increase the height up to 7cm
-get a butterfly handlebar, that brings the reach about 5-7cm shorter

The 900 series have better frame tubing (True Temper vs standard CrMo), lugs (up to 1993) and in general a more "sportive" geometry. But the 800 series are also great bikes, specially for touring and commuting.
