Any 7 or 8 speed chain will be fine. (they are the same width)
You could also use a narrower 9 or 10 speed chain too.

The general rule with chains is that you can use a chain designed for more sprockets on a cassette but not vice - versa.
ie. you can use a 9 speed chain on a 7 speed cassette, but you can't use a 7 speed chain on a 9 speed cassette.

The more sprockets on the cassette, the narrower the chain has to be...

You'd only need the shorter single ring bolts if you are only attaching the chainring to the cranks.

If you also run a bashring/guard, then you can use the normal longer bolts.

Okay, and then just remove some links to make it tight? Obviously around chainring to largest rear cog and through derailleur?

Remove enough links so that the rear mech cage is vertical or just forward of vertical when on the largest cassette sprocket.

Any shorter is unnecessary and you will eventually kill the spring in the mech.

Be aware though that if you do revert back to a double or triple chainring set up then you will need a few more links back in the chain otherwise you will have trouble if you accidentally shift into the 'big - big' ring combination.

I dig up this topic from 2014. I'm working on my first one restoration. A Decathlon Rockrider 26" with a 1x7 project as a commuter.

I'm asking if it's possible to bypass the way to grind the teeth of a largest chainring or to use a chain device by using a 9 speed chain with a narrow wide chairing on a 7 speed cassette.
