This might be a stupid question ......

I’ve got a pair of 517 citrus rims on a set of XT M750 , and feel I want to match the hubs to the rest of my groupset which is XTR.

Having never built a set of wheels I ask as a novice. If I buy some XTR m950 hubs will they just swap over. Obviously I’ll make sure they both same spoke count but will spokes be the same length ?

You need to know the dimensions of the 2 hubs. If they are the same in theory yes. However, there is so much bad data, I would only ever rely on a measurement I took myself.

New spokes are not that expensive anyway.

You should be fine. Check the spoke lengths here:

but the difference in hub dimensions is too small to worry about. Sort the spokes into four groups (leading and trailing, left and right) and use the same orientations. I usually use new nipples.

It's more hassle to change hubs than to build new wheels though. Might you be better off looking for some NOS rims?

Be careful dismantling as well. It's more like building in reverse than just unscrewing everything.

New nipples is v.good advise too. Unless the wheel isn't that old. (It probably is.)

TBH, it's not actually difficult to do. Just need to be organised and ordered. Not just go at it like a bull in a china shop.

I reckon it's one of the big differences between someone who just replaces parts on a bike and an actual bike mechanic.
