Single speed or fixed 700c wheelset

As title, really. Picked up an old frame that I'm looking to turn into a winter hack, so nothing too exotic please!

Can you build wheels? I have a pair of 32 hole hubs with spokes, both large flange and solid axles with flip-flop rear (120mm OLD). You'd just need a pair of 32 hole rims (approx 25mm deep) to rebuild them, which is what I'm going to do if you don't want them And I'm in M21
