Rim & spoke recommendations

Hi.

I have very nice pair of Dura Ace 7800 hubs and want to build some wheels for my Hewitt frameset. It is mainly used for winter and light touring and can accommodate up to 32mm tyre width but I may want to use wider tyres in the future on another frame, so I was thinking of the Mavic open pro ust.
I have no idea what spokes to use, and have a lot to learn regarding building them.
Any suggestions and/or tips will be gratefully received.

The RR511 rims look good, shame there not available in silver though.

Silver is hard to find now.
Halo do some polished ones, but they are a bit deep.
The Soma Eldon is a good looking classic

I always use DT competition spokes, they're a good all round combination of strength, weight, availability, range of lengths and price.
Rims, for modern options I can't comment. I have a stash of older Mavic and wolber that should keep me going for a long time

I like the classic look of the soma's but I think I'm going to go for the DT's, not sure which ones yet....
Was just looking at the DT spokes, thanks foz for the suggestion, competitions sound spot on
