Qr rubber o rings

What function is actually served by the o-ring? Many newer skewers don't use them. The cost of new skewers on Amazon isn't that much more than ordering a small pack of the O-rings...

The O-rings fill the groove that has been machined into the QR nut to accept an O-ring. Simple!

In other words - they serve no purpose. The skewer works just as well in the absence of the O-ring. I don't know, maybe they are there to make it easier to grip the nut while spinning the QR lever before locking it. A solution to a problem nobody had, sure - but damn they look good!
 
They ad some grip when turning the quick release. Models without o ring have Some sort of patern (don’t know the english word) or Some form of tabs to hold onto like the later ringle twisters had
