New to RetroBike - 70's Carlton

Just joined the group. I'll get a bit more Carlton loveliness add when I can! Looks to be a really active group.
 
It's covered in 80s shimano and has the same lugs and fork crown as Raleigh's 501 bikes did before aerospace contour hit... Not sure that's a 70s bike at all.

The head badge is one give away, by late 70s it was a foil sticker... Also Crespera lugs, dropped by c1974.

Also that has confirmed if i have Crespera lugs so thank you again.

I have seen you can get new 27" wheels but can I change over the 5 speed gear (this is the cassette right) at the back from my old rear wheel?

Yes you can but you will need a special tool to remove it, or ask your local bike shop to do it for you. If you are going to buy new wheels you will need to ensure that the distance between the axle lock nuts (commonly denoted as width OLN - over lock nuts) is the same as the rear dropouts. As yours is fitted with a 5-speed block this will probably be 120mm. 6/7 speed is typically around 126mm and modern stuff with bags of gears 130mm. Do you need to replace the wheels immediately? If they are structurally sound it might be worth persevering and service the hubs by replacing the balls and packing them with fresh grease - this will be much cheaper than replacing the wheels. You will need to invest in some cone spanners though! I would be inclined to try to get everything else working properly first. Welcome to the madhouse!
