I’m quietly confident I’m right with this. Have you made sure it’s straight? I fitted a new cassette (new to me) to my Zaskar and had a Similiar issue and the mech hanger was miles out.

I'm not so sure about the hanger, as the OP states the problem goes away when he reverts back to the old chain and cassette. If a hanger was bent, it would skip no matter what chain and cassette are on there. Although thinking about it, this would also be true of my freehub suggestion.

Generally I agree, however the worn components have that extra bit of slop that can take up the misalignment?
 
Without any pictures we can speculate until the lockdown cows come home.

I've seen people wrap the chain around the lip on the mech cage, tension screw too far etc etc
