You see alot of cross bikes with those brakes.. I've often wondered how they work too. :?

Yes I have four arms

This levers are used in Cyclocross and I use it to have the brake position similar to mtb ...

are the ultegra brakes aswell, or just shifters?

both the levers act on the brakes ... the shortest pull the same wire of the Ultegra.
