Get some built, then you can spec what you like, personally, I would go for Campy hubs, as they last much longer than most others and roll much better too, with lower bearing drag than Shimano or most other brands. £300 is a decent budget, so should leave you room for manoeuvre.
I have some 80's Campy hubs, that still roll like ice on glass and will spin for over 10 minutes.

I've just got a near mint cond 2000 once edition frame I'm going to build up. Not sure how to build it up......retro team bike or use the grey 6700 ultegra I already have.....mmmmm

OEM would have been Campag', with Mike Burrows seat post, these frames are vastly underrated and readily available at little money, I would love the all Carbon version, in the Natural finish.
