Wanted Modern Gravel/CX bike (disc), Large-ish 56-58cm?

After a couple of half-hearted attempts I want to give a proper go to a modern gravel/CX bike that I can set up for road use in the winter, a bit of commuting in fairer weather, and gravel in the summer. It's a bit of a speculative one and the budget is variable (I haven't decided yet) depending on what's available at good value, I'm happy to upgrade/swap parts out as required. My priorities are:

Large-ish frame, something like 56-58cm is usually good for me at just under 6'
Disc brakes (hydraulic, or I'll be swapping them out for some)
Carbon frame if at all possible, carbon fork definitely

If there's anything that roughly fits the bill I'll consider it. I'm in Hampshire but can travel a bit for the right bike if postage is not an option. Cheers!

I very much doubt you want the "thing" I have but its farcically cheap and comes with a carbon fork ..

For what its worth I bought a new Sonder Camino this year and really like it. Its 1x only however depending on road ambitions. When i was looking didn't see many carbon options tbh even at crazy money.
