Shimano stamps the part number on the back of each of those parts. If you can locate that part number, you can then go to one of these sites and look up the year of production. Hope this helps.
If you want the month and year it was made there will be a two letter stamp somewhere, do a search and then date it

As for model number the easy way, rear mech should be on the silver parallel plate on the back, with RD-Mxxx
front mech will either be in the rear guide plate or on the inside of the band.
Though looks to be the set before the 'II' models. (think it M730 from ~ '87 to '89)
