The Scots Pine Cafe just north of Eddleston on route to Peebles gets my vote. Some great scran and loads of tray bake choice.

Been passing that for over 15 years on way to GT but never been in. Times I'm passing it's not opened yet or just shut.
 
think my all time favourite is the moutain cafe in aviemore.

regular haunt in Edinburgh is Coffee Noir in Palmerston place at the west end (just round from work).

favourite place in Dunfy has shutdown but still a couple of nice ones.

Couple of great places in peebles as well, the chocolate place on the bridge at the end of the high street is great.

The wee shop at Laggan, but the family have been deported now. Didn't employ enough people apparently. Bureaucratic madness.

The burger van at Garve. EDIT 12/7/16: Arrived there absolutely bonked today. £3.50 for coffee and egg and bacon roll later, cured. :)

Chip shop in Ullapool.

Velocity in Inverness always worth a visit.

Good shout, used that recently for dinner having over shot Jamies "best roll and bacon ever" at Tarvie - top grub and chat from the proprietor
