I'm struggling with Sheldon Brown so can anyone tell me the size of BB I need for my m900 cranks to go on my goat?

I believe the norm is 107mm bud same as m737 too.. It is what i use with a 68mm width bb.

I don't know about the XTR UN-91 bottom bracket but you could get XT in 73x107, I'm pretty sure I have one in the parts bin.

UN-91 definitely comes in 73x107. I have a few of them.

M900 was the start of the 107/113 setups with UN90. 107 being the main length, 113 being the alternative 50mm chainline
Later they added 110 to the mix.
