BUT - that black fork is drawing my eyes from the green.

I think you should make it more green with the original fork and a ahead quill adaptor.

Old Project IIs are already green but could not get a headset to suit in time for the rebuild, it already has a quill adaptor.
May get round to putting them back on at some point.
Found a green saddle in the US and some green hubs - just need a green seatpost and rims.

Or, I could just balance the black forks with a black seatpost?

No - get a green headset to go with the green forks. Something about Konas - they look best with PIIs IMO.
