Good that you've addressed the saddle, next thing I would recommend to still change are the tires.
At least you should black the bulky logos at the current used Hutchinson. There are special gummi markers, but also using regular permanent ones like Sharpie, Edding, etc. or my favorite one4all works to my experience, you may just have to redo it after first ride in rain or after a few months a second time.
Maybe also you should give it a try with Skinwalls?

The bike is looking nice! I personally like the Hutchinson tyres on it - logo and all, I ride Hutchinson myself on an 80s bike - no probs. plus the side-walls say ‘Python’ and there’s definitely something snaky about the bike

Indeed. I don't mind the tires. But skinwal tires woukd work well. The bike will come with me to Korea then Japan. So I will find something suitable there.

BTW, any tips on how to use the screws of the wheels without damaging the bike paint?
