I guess the obvious choice would be to run a set of Shimano MT-63 levers? Exactly the same spec as the Levers in the STI units, but intended for the Deore/MT-60 thumb shifters (still an option with Deore DX at the time).
It's also possible for you to also trim off the pod mounting lip on the STI units to make a perfectly useable brake lever. Appreciate that it isn't worth butchering a perfectly good set of STI shifters though! I've a couple of pairs (minus shifters) going cheap if you wanted to have a go.
If you fancy something different I've found that Diacompe SS7 levers seem to work particularly well with the low profile DX cantilever brakes, assuming that you have these. Thinking about it I've also used them with the older MT-60 brakes as well.

I've been looking at this as well, for another ss but for daughter on 1992 Orange prestige but think all said as far as Shimano, m732/m733 in XT range and MT-62/MT-63 in Deore DX type range difference in each being 4 vs 2 finger. What I have also done on one of my single speeds is M071 (DX), without the pod but leaving the hanger, its not obtrusive with ss and with gripshift there is nothing either. Same would apply to XT equivalent M091.
The good non shimano stuff seems bit rarer and pricier......
