Do Avid v-brake pads work on.....

Shimano vbrakes? I can't see why they wouldn't, but also they might have slightly different fitment and I'm second guessing myself.

(Got some Avid Magnesium brakes and some XT so was going to fit the pads from the Avid.....?)

Levers are SD7's - prefer the look of XT v's but if it's much of a muchness then I'm a lazy tinkerer and I'll just leave as is.

Yes, all the pad bolt diameters are identical.

if you mean will the pads fit in the shoes then yes i think so
I have some generic shimano compatible pads that fit in my avid arch rival shoes ok, so assume the avid pads will also fit in shimano shoes

Yes. Things only get a bit strange when you are trying to fit v pads and canti pads in the respective holders.

I'm sure there must be exceptions, I mean the industry has constantly been trying to come up with proprietary bits to make you have to buy from the oe brand, but I think they left v brake pads alone.

I've seen some funky pad holders, but they took standard pads.
