Thank you folks. The bike, the RockHopper, was set up with cheap levers and SD7 calipers while I got a feel for it and worked out what I wanted to do with it. The braking was fine but these parts were just filling the gaps temporarily. After getting it powder coated, I installed the Deore v brakes, using the fairly new cables that had been fine with the temporary set up and, although the brakes stopped the bike, they felt sloppy, they returned badly and the right lever rattled. I had to really focus on smoothing the curves in the cable outers to get them to return. The levers feel like they're made of tougher stuff than the Tektros; they just didn't feel great in use. If you're familiar with the Avid FR-7 levers with the little red knob to tighten or loosen the feel, I have that as tight as can be and the Deores felt like the opposite extreme.
Anyway, I was asking about the XT or LX v brakes for the Stumpy (not the RockHopper) but I was wary of being similarly disappointed. As it is, I think I'll get a set of T780 while there are still a few new ones available.
As for the Deores: I took a long look at those today and remembered I'd put the little 'prongs' of the return springs in the middle holes next to the brake bosses, which is fine for every other v brake I've ever used. I tried switching holes for maximum tension and, hey presto, they are transformed and the tauter cable has stopped the rattling in the lever. I should have thought of that earlier. :facepalm:
