Servicing them is pretty straightforward, open them up, turn them upside down, pour out the old oil, refill with the new and then pump them up as required. Obviously the tricky part is getting the volume/ weight of oil right. I don't have the manual to hand, but they're pretty agricultural, have a wee experiment and you should work it out. As for the seals, I doubt you'll find any designed for the forks, but should be able to improvise something.
